Bellini
- Champagne Flute
- Fine Mesh Strainer
- 2 oz White Peach Purée
- 1/2 oz Speciality Liqueurs (Peach Schnapps or Peach Liqueur )
- 4 oz Sparkling Wine (Prosecco or Dry Sparkling Wine (chilled) )
- 1 dash Angostura Bitters (Orange Bitters)
- Orange (Garnish: Peach Sliver or Orange Spiral)
How to Make
Place peach purée at bottom of a mixing glass; add orange bitters and pour in chilled Prosecco wine.
Gently bruise purée with the back of a bar spoon, pulling the peach purée through the Prosecco to incorporate.
Strain into a chilled champagne flute then float peach schnapps/liqueur on top and stir gently.
