Bellini

  • Champagne Flute
  • Fine Mesh Strainer
  • 2 oz White Peach Purée
  • 1/2 oz Speciality Liqueurs (Peach Schnapps or Peach Liqueur )
  • 4 oz Sparkling Wine (Prosecco or Dry Sparkling Wine (chilled) )
  • 1 dash Angostura Bitters (Orange Bitters)
  • Orange (Garnish: Peach Sliver or Orange Spiral)

How to Make

  1. Place peach purée at bottom of a mixing glass; add orange bitters and pour in chilled Prosecco wine.

  2. Gently bruise purée with the back of a bar spoon, pulling the peach purée through the Prosecco to incorporate.

  3. Strain into a chilled champagne flute then float peach schnapps/liqueur on top and stir gently.
