  • Shaking Tin
  • Coupe Glass
  • Sour Glass
  • Hawthorne Strainer
  • Fine Mesh Strainer


  • 1 oz Angostura Bitters Aromatic Bitters
  • 1 oz Lemon Fresh Lemon Juice
  • 1 oz Demerara Syrup
  • 1 Egg White


Demerara Syrup

  • Combine 1 part Demerara sugar with 1 part hot water
  • Stir until fully dissolved

The Cocktail

  • Place all ingredients in an empty shaker tin
  • Shake hard for one to two minutes until the egg white is fully emulsified
  • Strain into ice-filled sour glass
  • Place ice in the shaker tin and shake vigorously until shaker tin frosts
  • Double strain into a chilled sour or coupe glass
